Bombers first franchise planned for Troy

June 21, 2011 A Bombers Burrito Bar is preparing to land in Troy, New York.
The casual Mexican-American restaurant, planned for 2 King St. in the city's emerging marina district, would be the third Bombers and the first Bombers franchise.
Siblings Tami Dzembo and Glenn Young are working out the franchise details with Bombers owner Matt Baumgartner.
A contract hasn't been signed yet, but Baumgartner expects the agreement to go forward once the franchisees secure financing.
"It looks very likely that it will happen," he says. Dzembo referred all questions to Baumgartner.
Bombers' Website lists a one-time $30,000 franchise free for franchisees, and royalty fees that equal 4 percent of weekly sales.
Baumgartner, 38 and a Union graduate, owns Bombers' in Schenectady in Albany, Wolff's Biergarten in Albany and the soon-to-open Olde English Pub, also in Albany. The establishments employ 240 people.
The Troy Bombers is expected to create 70 full- and part-time jobs.
Dzembo, 40, of Troy, and Young, 37, of Waterford, plan to invest about $700,000 to bring the building to code and convert the former nonprofit offices to restaurant space. The brother-sister team would lease the King Street property from Donald Boyajian, an Albany attorney who also owns several surrounding buildings.
The architects are C2 Design and Architecture of Schenectady, the same firm that crafted the Schenectady Bombers.
Baumgartner has had franchise inquiries from as far away as Florida, but none have advanced as far as the plans for the Troy Bombers.
The first Bombers, located Lark Street in Albany, opened in 1997. Baumgartner opened a second Bombers, on State Street in Schenectady, in 2009. He also owns Wolff's Biergarten, in Albany, and is preparing to open another pub in Albany called The Olde English. The restaurants employ a total of 240 people.
Dzembo said she has been working with the city on a potential package of grants and monetary assistance that could help get the eatery open. She and Christopher said details of a potential financial package remain under negotiation.
Dzembo said she expects the restaurant to have about 70 employees. Construction could begin by summer, she said, with an expected opening in the fall.
